Chef Hideki Tsukao brings Tendon Kohaku to America for the first time, opening the downtown Bellevue store in the summer of 2024 to serve premium tempura don with a modern and regional twist.

With a special attention to the thin, but crispy, tempura batter, Tendon Kohaku explores luxury ingredients through the humble tempura rice bowl. When in the Pacific Northwest, the salmon is the star of the show and this restaurant's Thick Cut Katsu Salmon Don is topped generously with Ikura, celebrating the beloved ingredient. Accompanied by traditional Japanese dishes like the Mentaiko Udon, the Sweet Potato Brulee dessert, and a selection of tea lattes, this is a hotspot for lunch, afternoon tea, and dinner.
